Buy Yourself Some Time for Back to School

Let’s warm up for back to school with a little back to school math: two kids + four sports, divided by two parents with full-time jobs + one seasonal family side business = ZERO time for cooking. Can you do a similar math problem with your family activities?

How would it feel to sip your morning brew on ‘Just Another Manic Monday’ knowing dinner was done? I can tell you from experience it feels like you’ve already won the day! That’s why I’m writing this post, I want all moms to WIN in the kitchen, because it’s a nutritional and financial win for your family.

In one of my nerdier moments, I counted sixteen Mondays between the start of school and winter break. I figured I needed four ‘winners’; that everyone in the house liked to eat, could be assembled ahead and refrigerated or frozen.

Luckily, the Registered Dietitians and Farm Foodies here at Southeast Dairy are always testing and creating goodies for you and your family. Here are a few recipe ideas to help you get started.

Turkey Tetrazzini with Cheddar and Parmesan

Grilled Chicken Cheddar Casserole with Mushrooms

Easy Cheesy Chicken Enchiladas with Yogurt Sauce

Tamale Pie (low lactose)

Check out this epic freezer cooking post with useful tips from fellow Farm Foodie Ree Drummond, aka The Pioneer Woman. If you have a small freezer, or this feels overwhelming, just pick one or two recipes to start. When you’re buying back to school supplies, don’t forget to buy yourself time by putting your freezer to good use. Here’s to WINNING the fight with this years’ back to school chaos!
