Fall has arrived! The days are shorter, evenings are darker, and mornings are cooler. While I love to use my crockpot year round to simplify mealtime, I find it gets the most use on cool fall days, when my family is craving the comfort of warm soup or stew. Below are my favorite fall crockpot meals.
- Potato Soup: You may not think of potato soup as a main dish, but warm and hearty potato soup serves up 13 grams of protein per bowl, thanks to the double dose of dairy it provides through low-fat milk and cheese. Serve it with crusty whole-wheat bread and a side salad and you have a complete meal the whole family will enjoy.
- Easy Chili: Chili is a great dish to make in the crockpot as it has ample time to simmer and meld all of the flavors together. This is an easy chili to pull together that will please the whole household. Amp up the nutrition by topping it with nutrient rich cheese and plain Greek yogurt in place of sour cream. Serve with cheddar corn bread
- Slow Cooker Veggie Lasagna: This may not fit in the soup or stew category, but it is a crock pot fall favorite in my house. Not to mention a delicious way to serve up veggies. Great for a meatless meal to please all palates!
