Crustless Spectacular Spinach and Artichoke Quiche


  • 1 package of frozen artichoke hearts, thawed and chopped
  • 1 package of frozen spinach, thawed and drained
  • 4 eggs, whisked
  • 1 cup shredded mozzarella cheese
  • 3/4 cup 2% milk
  • 1/2 onion chopped
  • 2 tablespoons of Parmesan cheese
  • 1/8 teaspoon salt
  • 1/4 teaspoon pepper


  1. Pre-heat oven to 350 degrees.
  2. Line a 12-muffin tray pan with muffin tins. Spray each with non-stick cooing spray.
  3. Combine all ingredients into a large bowl.
  4. Evenly pour mixture into 12 muffin tins.
  5. Place in the oven. Bake for 20-25 minutes.
  6. Remove and serve.
