Crustless Spectacular Spinach and Artichoke Quiche
Ingredients:
- 1 package of frozen artichoke hearts, thawed and chopped
- 1 package of frozen spinach, thawed and drained
- 4 eggs, whisked
- 1 cup shredded mozzarella cheese
- 3/4 cup 2% milk
- 1/2 onion chopped
- 2 tablespoons of Parmesan cheese
- 1/8 teaspoon salt
- 1/4 teaspoon pepper
Directions:
- Pre-heat oven to 350 degrees.
- Line a 12-muffin tray pan with muffin tins. Spray each with non-stick cooing spray.
- Combine all ingredients into a large bowl.
- Evenly pour mixture into 12 muffin tins.
- Place in the oven. Bake for 20-25 minutes.
- Remove and serve.
