The first image that comes to mind when I think of the traditional holiday eggnog is Uncle Eddy drinking from his moose cup in the comedy, National Lampoon’s Christmas Vacation. That is likely because my husband and I have a tradition of making cocktails and watching National Lampoon’s Christmas Vacation every Christmas Eve. So, if you need a good laugh to help ease the stress of the Christmas season, watch this movie.

Eggnog, also known as milk punch or egg milk punch, is traditionally made with milk, cream, eggs, sugar, spices such as cinnamon and nutmeg and often finished with a ‘splash’ of bourbon, rum or brandy. However, I want to introduce you to a simplified version of eggnog…eggless eggnog. This may seem a little odd to some since eggs are typically essential to achieving the thick, frothy texture of traditional eggnog, but eggless eggnog is appealing for a variety of reasons. It helps save on the time spent in the kitchen during the holidays and eliminates the food safety concern of raw eggs. Eggless eggnog is a great option for those with an egg allergy. Additionally, instead of conventional milk, this recipe calls for lactose free milk, which contains the same nine essential nutrients that conventional milk provides, minus the lactose. Your guests that are lactose intolerant can enjoy this traditional holiday drink as well.

Eggless Eggnog

Ingredients:
7 cups 2% lactose free milk
1/2 cup sweetened condensed milk
2 teaspoons vanilla extract
1 teaspoon cinnamon
3/4 teaspoon nutmeg
1 package of vanilla or French vanilla instant pudding mix

Directions:
1. In a large mixing bowl or pitcher, whisk together the first 5 ingredients (Lactose Free Milk thru nutmeg).
2. Add the instant pudding mix, whisk until combined.
3. Serve immediately. However, it is better if allowed to refrigerate for a few hours or overnight.
4. Stir before serving if you choose to refrigerate.

Optional:
*Top each glass with whipped cream and fresh grated nutmeg or a cinnamon stick for a little something extra!
* For an adult version, add ½ – 1 ounce of bourbon, rum or brandy for every 8 ounces of eggless eggnog.
