Served warm or cold, this cinnamon-flavored rice pudding is a perfect comfort food dessert.

Ingredients
- 5 cups LACTAID fat-free milk
- 1 cup uncooked white jasmine rice
- 1⁄2 cup sugar
- 1⁄2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1⁄2 cup raisins
Instructions
- Combine milk, rice, sugar and salt in top of a double boiler. Cover and cook over simmering water 1-2 hours or until thickened; stirring occasionally. Can be served hot or cold. Remove from heat and add cinnamon, vanilla and raisins.
