Stovetop Rice Pudding

This easy stovetop version of rice pudding features high-fiber brown rice, raisins, cinnamon and lactose-free milk.

  • 3 tablespoons cornstarch
  • 2 cups lactose-free milk, divided
  • 12 cup sugar
  • 3 cups cooked brown rice
  • 12 cup raisins
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla
  • Pinch of salt


  1. Combine cornstarch with 1/2 cup milk until dissolved; set aside.
  2. Combine sugar and remaining 1 1/2 cups milk in a medium saucepan. Cook over medium heat until sugar dissolves. Stir in rice, raisins, cinnamon, vanilla and salt; bring just to a boil, reduce heat and simmer 5 minutes. Stir in cornstarch mixture and continue simmering 5 additional minutes or until thickened.
