Hot Chicken Caprese Dip

Imagine a classic Caprese salad mixed with grilled chicken and cream cheese, topped with more mozzarella and then baked until it’s bubbly —yum! Serve with toasted crostini or pita chips.

Ingredients

  • 2 cups cooked diced chicken
  • 1 8-ounces cream cheese softened
  • 1 1/2 cups shredded mozzarella cheese divided
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh chopped basil
  • 1 tablespoon minced garlic
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sea salt
  • Fresh cracked pepper for garnish
  • Fresh basil for garnish

Instructions

  • Preheat oven to 350°. Use 8×8-inch oven-safe baking dish.
  • In a large mixing bowl combine chicken, softened cream cheese and 1 cup of mozzarella cheese. Stir until well combined. Stir in tomatoes, basil, vinegar and salt. Spoon mixture into baking dish, spreading out evenly. Top with remaining 1/2 cup of cheese.
  • Bake until the cheese is golden and bubbly, approximately 20 minutes. Garnish with fresh basil and cracked black pepper if desired. Serve immediately.
