Smith Boiled Custard

Smooth and creamy boiled custard is a classic dessert made simply with eggs, milk, sugar, and vanilla. This recipe from the Smith family also uses cornstarch for extra thickening power.

  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1/4 cup cornstarch
  • 4 egg yolks
  • 4 cups milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon grated nutmeg (optional)


  • In a medium mixing bowl, mix sugar, salt and cornstarch together. Next, stir in egg yolks and mix well. After these ingredients are mixed well, pour into heavy-bottomed sauce pan or double boiler. Over medium heat, gradually add milk. Bring mixture to a boil slowly. Continue to stir and cook until a spoon coats when dipped it in the mixture. Add vanilla and stir. Place in refrigerator and serve cool. Sprinkle with ground nutmeg, if desired.


Yield may be 10-12 servings.
