Instructions
Mix the Greek yogurt and Dijon mustard to create a creamy spread. Cut the pita in half and gently open the pocket. Spread the yogurt mixture inside (or use yogurt mixture as a dipping sauce instead), layer with turkey, cheddar cheese, cucumber, tomato, and spinach. Add your favorite herb/seasoning if desired.
Wrap it up for a quick breakfast, pack it in a lunchbox, or refrigerate it for an easy grab-and-go option. For younger children, use half a pita and adjust the ingredients and textures appropriately for their age.
Don’t forget to get the kids involved. Set out the ingredients and let everyone build their own Power Pocket. Kids can choose their vegetables, add cheese, or help mix the yogurt spread. When dads set up age-appropriate tasks in food preparation, it can turn ordinary chaos into quality family time.
Back-to-school nutrition doesn't require Dad to be a chef. It starts with being present, planning when you can, and showing your family that taking care of yourself matters. This means that YOU can’t forget to eat.
This school year, don't aim for perfect meals. Aim for practical meals. While focusing on your family, don’t forget YOU! Stock the fridge, build your Power Pockets, and enjoy the moments you get around the table, even if sometimes it's on the way out the door!
