High-Protein Dairy Breakfast: Cottage Cheese Banana Pancakes

These cottage cheese banana pancakes are a great high-protein dairy breakfast. They are naturally sweet, blender-friendly, and packed with full-fat cottage cheese and eggs. Made with rolled oats, ripe bananas, and warm cinnamon, this easy pancake recipe comes together in just 15 minutes.

Ingredients

2 cups old-fashioned rolled oats

2 medium bananas

2 teaspoons vanilla extract

1 tablespoon baking powder

1 teaspoon cinnamon

2 large eggs

½ cup water

1 cup full-fat cottage cheese

Notes

A simple first food for babies. The perfect size for baby grasping and bringing to their mouth.

It is recommended that milk not be introduced until the child is a year old, but full-fat dairy yogurt and cheeses are appropriate.

These pancakes can be frozen and reheated as needed.

High-Protein Dairy Breakfast: Cottage Cheese Banana Pancakes

Instructions

  1. Add everything to a blender or food processor and blend until smooth, scraping down the sides if needed.

  2. Heat a skillet or griddle over medium heat.

  3. Lightly grease the pan, then scoop about ⅛ cup batter per pancake.

  4. Cook for 2–3 minutes, until bubbles form and the edges look set. Flip and cook for another 1–2 minutes until golden.

  5. Repeat with the remaining batter.
