High-Protein Dairy Cottage Cheese Taco Bowl
Incorporating cottage cheese into a Tex-Mex taco bowl adds high-protein dairy to lean seasoned beef, black beans, cheese, tomato, and avocado, which may seem a little unusual, but you’ve got to trust me on this one! Cottage cheese adds creamy richness that complements the spices and textures while increasing satiety and protein.

TOTAL TIME: 20 minutes
Ingredients
1/2 cup 4% milkfat or whole milk cottage cheese
¼ teaspoon lime juice
Dash of ground cumin
½ cup taco-seasoned cooked ground beef, warmed if chilled (see note)
¼ cup cooked brown rice, warmed if chilled (see note)
¼ cup rinsed and drained black beans
5 to 6 cherry tomatoes, quartered
¼ cup avocado, diced
3 tablespoons shredded Mexican-style or cheddar cheese
Hot honey (optional)
Notes
Prepare taco meat and cook rice in advance and keep them stored in the refrigerator to make these bowls (as well as other meal prep) quick and easy:
For the taco meat, I purchase 1 pound of lean ground beef and a taco seasoning packet and prepare the meat according to the seasoning packet directions. Cover and refrigerate the taco meat to later use for these bowls, as well as tacos, quesadillas, and salads.
For the rice, I recommend cooking a larger batch of rice in advance and then storing it in the refrigerator. Another option is to purchase and heat a 90-second heat-and-serve rice packet. Cover and store extra rice in the refrigerator.
